Festive Fruity Meat Loaf with Maltese sausage & pineapple

  1. 2 Onion
  2. 1 kg Minced beef
  3. Pineapple slices
  4. 2 tbsp bovril (beef)
  5. Maltese sausage
  6. Sage leaves
  7. 3 tbsp Breadcrumbs
  8. 1 Eggs
  9. Black Pepper


1. In a glass bowl, mix together the diced onions, chopped sage and minced meat. Remove the sausage from the casing and season with bovril beef flavour and black pepper. Beat the egg and add to the mixture, together with the breadcrumbs and chopped pineapple slices. Mix well with your hand.

2. Place the mixture in a loaf tin, decorate with an additional pineapple slice and bake for 50 minutes at 180C until golden and cooked through.
