Homemade caramel


1 cup of sugar

6 tablespoons (around 100g) of butter, room temperature

1/2 Cup of heavy cream

1 tsp of salt

  1. In a heavy bottomed pan, heat the sugar on low heat. Heat until all sugar is melted. Whisk every 20 seconds. Sugar will form into clumps before melting be patient and keep an eye out to make sure that it does not burn.
  2. Once melted, remove from heat immediately and stir in the butter. If mixture starts to bubble, that is fine – keep whisking , this will give time the sugar and butter to start incorporating together.
  3. Next, pour in the heavy cream and sea salt. Stir until everything is combined 4. Pour into a small bowl or jar and let cool before you use.
